Each of the six courses is thoughtfully matched to highlight the flavors and character of both the food and the wine. Paired with the 2024 The Belle, the first course offers a mollusk scallop stone fruit mosaic, kombu and snap pea greens. The second course offers melted leek, carrot jus, radish lardon and pistachio gremolata, paired with the 2024 Wooden Steel.
The 2023 Chardonnay joins the entree of stuffed pasta with sheep milk cheese, rabbit confit and ox demi. The fourth course features arancini charred octopus, bonito flake and double-whipped brie, paired with the 2021 Pinot Noir. The fifth course of Pincho Meishan pork belly, duck breast, KO BBQ and tallow toast is pared with the 2021 Cabernet.
